Today Gourmet lobster tails are sustainably wild-caught off the coast of Maine and flash-frozen immediately after catching to maintain their glorious, buttery flavors at their freshest.
Flash freezing uses extremely cold temperatures to rapidly freeze the lobsters. This process minimizes ice crystal formation, locking in freshness, taste, and quality. The smaller ice crystals ensure the lobster maintains its structure, moisture content, and texture when thawed.
Your frozen, uncooked lobster tails ship in an insulated box with dry ice. Thaw them overnight in the refrigerator, preferably on a towel to catch any drips. For quick preparation, butterfly the tails using shears to cut from the top to the fin, then loosen the shell to expose the meat. Boil, steam, or grill in just a few minutes.
Choose from 6, 8, 10, or 12 tails, each weighing between 4-5 ounces. Expect about 50% of cooked lobster meat per tail. We recommend 1-2 tails per person.
